Its core is a mixture of 1-4 galactose units connected by specific glycosidic bonds. It is a white to off-white powder that is easily soluble in water (solubility approximately 75g/100mL at 25°C). It has a mild, slightly sweet taste (sweetness approximately 20%-30% of sucrose).
