Galacto-oligosaccharide 57% Syrup is a natural functional oligosaccharide with zero added sucrose or glucose. Made from non-GMO bovine whey or lactose, it undergoes enzymatic conversion, refining, and concentration. The active ingredient galacto-oligosaccharide content is≥57% (solids basis). The core is a mixture of 1-4 galactose units linked byβ-glycosidic bonds. It is a clear, light yellow to light brown liquid (may be slightly turbid) and is easily miscible with water and liquid ingredients. It has a mild, slightly sweet taste (approximately 20%-30% of sucrose’s sweetness). It contains no free sugars and possesses both prebiotic and water-soluble dietary fiber properties, making it suitable for processing liquid and semi-liquid sugar-free and low-calorie products. Applications
1. Food: Used in sugar-free yogurt drinks and lactose-free milk beverages to promote probiotic survival and reduce whey precipitation; added to sugar-free juices and plant-based protein drinks to add subtle sweetness and fiber; added to sugar-free jams and salad dressings to balance flavor and stabilize consistency; used as a base for sugar-free ice cream to inhibit ice crystals and maintain a delicate texture.
2. Health Products: Used as a base for prebiotic oral liquids or added to sugar-free dietary fiber drinks and basic probiotic solutions to supplement fiber and regulate the intestines.
3. Specialty Foods: Used in sugar-free liquid infant foods and diabetic liquid nutritional supplements to regulate intestinal flora and meet the needs of low-burden liquid diets. Physical Properties
1. Excellent Miscibility: Blends easily with liquid ingredients such as water, juice, and whey without separation or precipitation, making it suitable for a wide range of liquid product formulations.
2. Mild Flavor: Slightly sweet with no aftertaste, it does not mask the original flavors of the ingredients and can mitigate slight beany and medicinal notes.
3. Processing Stability: Heat-resistant (stable up to 100°C) and acid-resistant (stable at pH 3.5-7.0), suitable for sterilized beverages and low-temperature freezing.
4. Metabolic Safety: Requires no insulin for metabolism, with a GI value of approximately 18, making it suitable for those seeking glucose control. Daily intake of up to 60 mL does not cause significant gastrointestinal discomfort and is well tolerated.
